Make Apple Latkes

Apple latkes are a traditional Jewish treat often made to celebrate Chanukah, but you can make them any time. This easy-to-make recipe is also low-fat and healthy. Follow the steps below to make 36 apple latkes.


Instructions


1. Beat 2 eggs well in a large mixing bowl. Mix the eggs with 1 1/2 cups of milk.


2. Mix together 2 cups of all-purpose flour, 1 teaspoon of baking powder, half a cup of sugar and a dash of salt in a separate bowl. Add these ingredients to the eggs and milk in the large mixing bowl.


3. Peel and grate 3 medium apples into large, course pieces. Add these to the mixture.


4. Heat 2 tablespoons of vegetable oil in a skillet on the stovetop. Using a spoon, place about 1 large tablespoon full of batter into the hot oil in the skillet. Cook until lightly golden, and then flip over to cook the other side. This will take about 2 minutes on each side.


5. Remove the apple latke from skillet with a spatula. Place on a paper towel to absorb the excess oil.


6. Sprinkle the hot apple latke with confectioner's sugar, and place on a plate with a side of applesauce.
