Make Fruit Vinegars

Flavored vinegars can be put in decorative bottles for added flair.


Fruit vinegars are a refreshing change to your everyday salad dressing. Almost any fruit can be used to make vinegar; it all depends on your taste. It is a lower-calorie and nutritious option for those watching their waistline, or those craving something different. They are also great gifts to bring to a dinner party or as a gift for the holidays. Just a few ingredients and a few hours are needed to make these flavorful vinegars.


Instructions


1. Pour raspberries into the strainer and rinse with cold water. Empty the strainer of raspberries into the saucepan. Stir constantly with the metal spoon until the raspberries come to a boil. Remove from heat and let it cool for 1 hour.


2. Put a double layer of cheesecloth in a mesh strainer. Place the strainer on top of the second saucepan. Pour the raspberries through the strainer. Let it stand for 1 hour. Rinse the first saucepan and repeat all the preceding steps with 1 qt. of blueberries.


3. Sterilize the two jars by putting them in the microwave for 1 minute. Pour the raspberry juice into one of the jars using a funnel. Add 2 cups of cider vinegar and 2 tbsp. sugar into the jar. Add the blueberry juice to the other jar. Add 2 cups of white wine vinegar, 2 tbsp. sugar and a cinnamon stick to that jar. Seal the lids on both jars.


4. Store in a cool dark place.
