Cut Yams Into Fries

Yam fries are a nutritious and tasty twist on French fries.


Yam fries are a delicious twist on traditional French fries. Yams are also known as sweet potatoes, although both names are misnomers for this highly nutritious root vegetable--it's not related either to potatoes or to the true yam found in Africa and Asia. Its taste is both sweet and starchy, and its color ranges from pale yellow to a deep orange. Any type of yam can be used to make fries; they may be cooked in oil or, as a low-fat and less messy alternative, oven-baked. Serve them with burgers, steaks or any grilled meat, or just as a snack.


Instructions


1. Remove the skin of the yams with a vegetable peeler.


2. Place the yams on the cutting board. Using your chef's knife, cut off a thin slice from each side of the yam, until you have formed a rough rectangle. This is called squaring off the yam.


3. Cut the yam into smaller rectangular slabs by making two to four lengthwise cuts, each about 1/4- to 1/2-inch apart. The number of cuts depends on the size of your yam.


4. Lay the slabs on their wide side and make two to four more lengthwise cuts, each about 1/4- to 1/2-inch apart. You now have a stack of long rectangular sticks ready for frying.
