Use delicate bean thread noodles in spring rolls.
Bean thread noodles, which are gluten-free, are made from mung bean flour. The thin, translucent noodles are also sometimes referred to as "glass" or "cellophane" noodles. These mild-tasting noodles are versatile recipe additions in that they tend to absorb the flavors of the ingredients with which they are cooked. Bean thread noodles are traditionally found in Asian-inspired dishes, such as spring rolls, soups and stir-fries, but they can be used in other types of cuisine as well.
Instructions
1. Fill a saucepan with enough water to completely cover the amount of bean thread noodles you are cooking. Bring the water to a boil over high heat.
2. Remove the saucepan from the heat and fully submerge the bean thread noodles into the hot water. Cover the saucepan, and allow the noodles to soak for 15 to 20 minutes or until they are tender.
3. Drain the noodles in a colander over the sink. Use the soaked noodles in your favorite recipe.
