Instructions

Make-ahead burrito

1. Gather eggs or egg substitute, fat-free American cheese, vegetarian 'sausage' patty and low-fat tortillas. Scramble the desired amount of eggs in a skillet.

2. Lay one tortilla on a plate. Place the scrambled eggs on one half of the tortilla.

3. Cook the sausage in the microwave according to package instructions. Cut it into bite-size pieces and lay it on top of the eggs.

4. Top it all off with a piece of fat-free American cheese ripped into pieces. Fold the tortilla up burrito style. Lay it open flap down on the plate and put in the refrigerator.

5. In the morning, place plate and burrito in microwave. Heat for 20 to 30 seconds.
