Process A Cheese & Pimento Spread

Cheese and pimento spread, which is made by combining cheddar cheese, pimentos, mayonnaise and other seasonings, is generally processed in a food processor. This is because the spread has a thick, creamy texture that can be difficult to achieve when mixing by hand. Processing a cheese and pimento spread is a simple task; all you really need to know is the order in which to add the ingredients.


Instructions


1. Fit the large bowl of the food processor with the grating attachment. Slide on the lid, then shred 1 lb. of cheddar cheese into the bowl using the processor.


2. Remove the grating attachment from the food processor and fit the bowl with the chopping blade. Add the mayonnaise, onion or garlic salt and about three dashes of hot sauce to the shredded cheese.


3. Pulse the mixture three to five times. The spread doesn't need to be pureed, but it does need to be thoroughly mixed. The mixture will be orange with pea-sized pieces of cheese scattered throughout.


4. Scrape the mixture off of the sides of the bowl with a rubber spatula and add the drained pimentos to the spread. Process the cheese and pimento spread until completely combined, about 10 to 15 seconds.


5. Store the cheese and pimento spread in the refrigerator until use.
