Cook Venison In A Smoker

Venison is any type of deer meat. Venison has a flavor much like beef, but is actually healthier for you. It contains less calories, less cholesterol and less fat than any other type of meat. Venison is a little more expensive then other meats, so most families prepare it only on special occasions. There are many different ways that you can prepare venison. The choice for the summer season is to smoke the venison.


Instructions


1. Combine the following ingredients in a bowl: wine vinegar, ketchup, soy sauce, honey, mustard, salt, pepper, paprika and garlic powder.


2. Rub the mixture from the mixing bowl all over your venison.


3. Place the venison in a marinating pan and pour in the rest of the marinade. Set in the refrigerator 4 hours before you are ready to begin cooking.


4. Soak 2 to 3 cups of hickory chips in a bowl full of water for 20 minutes before you are ready to begin cooking.


5. Set the hickory chips in the smoker and turn the heat up to 200 degrees F.


6. Place the venison on the smoker for 1 hour and 15 minutes per pound. If your venison is 3 lbs. then you would cook it for 3 hours and 45 minutes. If your venison is 4 lbs. then you would cook it for 5 hours.


7. Remove the venison from the smoker and let it sit on a platter for 10 to 15 minutes before slicing and serving. This gives the juices time to settle.
