The Best Way To Cook Sea Scallops

There are a number of ways to prepare fresh sea scallops.

Sea scallops are shellfish with a soft, fleshy texture and a mild and slightly sweet flavor. Sea scallop season runs from October through March, although frozen scallops are available throughout the year. Sea scallops can be served to enhance green salads, in creamy pasta sauces, in stir-fries or on their own. Although there are several ways to prepare scallops, it is best not to overcook them as the texture will become too tough and chewy.

Instructions

1. Create a marinade to add flavor to the scallops and make the shellfish more succulent. Make a marinade of diced papaya, lime juice, cilantro and jalapeno pepper, or soy sauce, fresh ginger and sesame oil, depending on your tastes.

2. Place the fresh scallops into the marinade and cover the bowl with a piece of plastic wrap. Let the scallops marinate at room temperature for five minutes on each side.

3. Place a skillet over medium-high heat and add enough olive or vegetable oil to coat the bottom of the pan.

4. Heat the oil until it is hot but not smoking. Add the marinated sea scallops and cook them for one to two minutes on each side, or until the outsides are seared to a golden brown.

5. Serve the scallops alone with a side dish, or on top of a salad, pasta or rice.
