Roll each individual slice of deli meat for easy serving.
Deli platters with a selection of cold cuts and cheeses are ideal for casual entertaining. Guests snack on them and usually a selection of crackers or breads are set out with the platter. Provide condiments such as mustard and mayonnaise for anyone who wants to create their sandwich. Purchase approximately 3 to 5 lbs. of meat per 25 guests, and roll the cold cuts for a large platter. You want to form log shapes so guests can easily pick out their selection.
Instructions
1. Lay your uncut lettuce greens over your large serving platter. Include one layer for the entire platter. Choose dark green lettuce for this project. The greens are for decoration and should be in large pieces.
2. Arrange one slice of ham horizontally if it is in a rectangle shape. Starting from a shorter side, roll the ham towards the other short side. Roll it so you can fit your finger in the middle, or it is too tight.
3. Place the ham onto your platter starting from the edge. Be sure to place the ham with the seam side down so it does not open back up. Repeat with all your ham slices. Keep the ham in one area of the platter. If you have to lay more rolls on top of another, start the new layer at least 1 inch from the edge of the first layer. It is easier for guests to pick up the meat.
4. Lay your turkey slice open and horizontal. Many types of turkey slices fall apart easily, so roll them carefully starting from the shorter side. Roll towards the other short side into a log shape. Repeat with the remaining turkey slices. Arrange layers onto your platter like the ham. Keep the turkey together in one area and be sure to lay the seam side down.
5. Fold salami slices in half. Salami usually comes in thin round slices. Fold in half and then half again so you have a cone shaped quarter of a circle. Place the salami in its own section of wedges between the turkey and ham, with the point side down.
