Tomato mozzarella salad is a great summer salad idea.
When it's hot outside, there's nothing better than a cool, refreshing summer salad. Summer salads take advantage seasonal fresh fruits and vegetables, which are used to make delicious salad dressings or incorporated into the salad itself. Summer salads also feature grilled toppings, such as grilled chicken, shrimp, fish, or steak, which adds a smoky, summery taste to the meal.
Strawberry Summer Salad
Strawberries are deliciously ripe and fresh during the summer, which makes them a great addition to summer salads. Add strawberries to salads with chicken in them, or serve them in meatless salads. Add feta cheese or goat cheese to complement the taste of the strawberries. Top the salad off with toasted almonds to add protein and "good" fats. Use a fruity vinegarette salad dressing to enhance the sweet and tart flavors of the strawberries. Mix minced garlic, honey mustard, balsamic and raspberry vinegarette, brown sugar, and oil and drizzle it over the salad.
Cucumber Salad
Cucumbers are a refreshing vegetable on a hot summer day. Cucumber salads don't require any lettuce; the cucumber pieces are the base. Cut thin slices of cucumbers, tomatoes and red onions. Mix mayonnaise and white vinegar, and toss the vegetables in the dressing mix. Season the salad to taste with salt and pepper, and you have a great side dish for a picnic or barbecue.
Tomato Mozzarella
Tomato mozzarella salads, also known as Capri salads, also don't require lettuce. The salad is made entirely of tomatoes and mozzarella cheese. The refreshing tang of the tomato against the salty, creamy richness of the mozzarella makes this a summer favorite. Cut tomatoes into round slices. Slice mozzarella in round, thin pieces too and mix with the tomatoes. Combine olive oil and balsamic vinegar, and drizzle it on the tomato-cheese mixture. Sprinkle with basil.
Barbecue Chicken
A barbecue chicken salad is a healthy, delicious and a cool summer choice. Marinate chicken breasts in store-bought barbecue sauce, or your own special barbecure marinade. Grill the chicken until it is completely cooked, and allow it to cool. Add mixed greens, sliced nectarines, grapefruit, avocados, tomatoes, and almonds to a large bowl. Slice the barbecue chicken in strips and lay them across the salad. Sprinkle the salad with cheese. If you don't enjoy fruit in your salad, leave the fruit out and add red onions, mushrooms or other favorite vegetables. Top with a honey vinaigrette, made of honey, Dijon mustard, balsamic vinaigrette, mayonnaise, chili powder and oil.
